The business of producing and handling milk
and milk products. In the USA and the UK,
over 70% of the milk produced is consumed in
its liquid form, whereas New Zealand relies
on easily transportable milk products such as
butter, cheese, and condensed and dried milk.
It is now usual for dairy farms to
concentrate on the production of milk and for
factories to take over the handling,
processing, and distribution of milk as well
as the manufacture of dairy products. In
Britain, the Milk Marketing Board (1933), to
which all producers must sell their milk,
forms a connecting link between farms and
factories.
